Sea Salt Caramel Walnut Blondies

If you’re in the mood for something sweet, try these vegan sea salted caramel & walnut blondies! They are super easy and fun to make, and soooo delish!

Ingredients:
Blondies:
-1 + 1/2 cups plain flour
-1 tsp salt flakes
-2 tsp maca powder
-3/4 cup brown sugar
-1/4 cup white sugar
-2/3 cup store-bought vegan caramel sauce (find in the dessert section of your supermarket, most are accidentally vegan)
-1 tsp vanilla extract
-2/3 cup vegan margarine, melted
-1 tbsp flax meal
-1/2 cup water

Caramelised walnuts:
-1 cup raw walnuts
-1 tbsp vegan margarine
-1 tsp brown sugar
-1/2 tsp salt flakes

Method:
1. Combine flax meal and water in a small bowl, set to the side. Preheat the oven to 180°C fan-forced, line a square baking tin with baking paper.

2. Add all of the caramelised walnuts ingredients to a frying pan, place it over medium heat on the stove. Mix, allow the margarine to melt, then fry up for a further 2-3 minutes. Remove from the heat.

3. Sieve flour into a large mixing bowl. Add salt flakes, maca powder, brown sugar and white sugar. Mix to combine.

4. Add melted margarine, vanilla, flax meal/water mixture and caramel sauce. Mix until combined, ensuring not to over-mix.

5. Add 3/4 of the caramelised walnuts to the blondie batter, mix to combine. Transfer the mixture into the baking tin, evenly spreading it out. Top with the leftover walnuts and extra salt, if desired.

6. Place in the oven and bake for 35-40 minutes, or until the edges begin to become golden. Once done, remove from the oven and leave in the baking tin for a further 20 minutes. Then, transfer to a wire cooling rack and leave to cool before cutting. Top with extra sea salt flakes if desired.
