Fun & flavourful iced drinks

The weather is warming up as we head into Spring here on the Gold Coast and I’ve been loving making fun iced drinks!
I’ve never been a big coffee or matcha drinker, which honestly encourages me to get creative and try new things.
These are 7 of my current favourites - I hope you enjoy!

Raspberry iced cacao

Ingredients:
1/3 cup frozen raspberries
1 tsp vanilla extract
2 tbsp cacao powder
2 tsp maple syrup
2 tbsp boiling water
Pinch of salt
7 ice cubes
1 cup (250ml) oat milk

Method:
Add frozen raspberries and vanilla to a small bowl. Place into the microwave and heat on high for 30 seconds. Remove from the microwave, mix and mash until well-combined.

Add cacao powder, maple syrup, boiling water and salt to a seperate small bowl and combine until smooth and lump-free.

Add raspberry mixture to a glass, then add the ice cubes, oat milk and cacao mixture. Enjoy!

Peach coconut water with passionfruit coconut cold foam

Ingredients:
1 fresh peach, pit removed
¾ cup coconut water
7 ice cubes
3 tbsp plant-based cream
1 tbsp coconut cream
3 tbsp passionfruit pulp

Method:
Add peach and coconut water to a blender and blitz on high speed, for 2 minutes, until well-combined

Add plant-based cream, coconut cream and passionfruit pulp to a glass and use a mix frother to combine and whip for 1 minute, or until light and fluffy.

Add ice cubes to a glass, pour over the peach coconut water and top with the cold foam. Enjoy!

Iced caramelised banana with cocoa cold foam

Ingredients:
1 banana
1 tbsp vegan butter
½ tsp cinnamon powder
1 tbsp brown sugar
Pinch of salt
1 cup (250ml) + 1 tbsp soy milk
3 tbsp plant-based cream
½ tbsp maple syrup
1 tbsp cocoa powder
7 ice cubes

Method:
Cut the banana into discs. Add butter to a frying pan over medium-high heat. Once melted, add the banana and fry for 2-3 minutes, tossing occasionally. Then, add the cinnamon, brown sugar and salt and fry for a further 2 minutes. Transfer to a blender, add the 1 cup soy milk and blend until smooth (approx 1 minute).

Add plant-based cream, maple syrup and cocoa powder to a glass and use a milk frother to whisk and combine until smooth.

Add ice cubes to a glass, pour over the caramelised banana milk and top with the cold foam. Enjoy!

Iced blueberry banana

Ingredients:
1 banana
¾ cup oat milk
½ tsp vanilla extract
1 tsp maple syrup
1/3 cup frozen blueberries
7 ice cubes

Method:
Add the banana, oat milk, maple syrup and ¼ tsp vanilla extract to a blender and blitz for 1 minute, until smooth.

Add frozen blueberries and the remaining ¼ tsp vanilla extract to a small bowl and place in the microwave for 30 seconds. Then remove from the microwave, mash and mix until well-combined.

Add blueberry mixture to a glass, followed by ice cubes and the banana milk. Enjoy!

Strawberry coconut water with lemon cold foam

Ingredients:
½ cup frozen strawberries + extra to top
¾ cup coconut water
3 tbsp plant-based cream
juice of ½ lemon
Pinch of lemon zest
7 ice cubes

Method:
Add the frozen strawberries and coconut water to a blender and blitz for 2 minutes, until well-combined.

Add cream, lemon juice and lemon zest to a glass and use a milk frother to mix until smooth and fluffy.

Add ice cubes to a glass, pour over strawberry coconut water, top with cold foam and grate over extra frozen strawberries if desired. Enjoy!

Iced turkish delight with rose cold foam

Ingredients:
2 tbsp cacao powder
2 tsp + ½ tbsp maple syrup
2 tbsp boiling water
2 dashes of rosewater
Pinch of salt
7 ice cubes
¾ cup + 1 tbsp oat milk
3 tbsp plant-based cream
¼ tsp vanilla extract
Dash of pink food colouring (opt.)

Method:
Add cacao powder, 2 tsp maple syrup, boiling water, 1 dash of rosewater and a pinch of salt to a small bowl and mix together until smooth.

Add plant-based cream, 1 tbsp oat milk, vanilla extract, 1 dash of rosewater and pink food colouring to a glass and use a milk frother to combine until light and fluffy.

Place ice cubes into a glass. Pour over the cacao mixture, followed by ¾ cup oat milk and top with the rose cold foam. Enjoy!

Chocolate coconut water with orange cold foam

Ingredients:
1 cup chocolate coconut water
7 ice cubes
3 tbsp plant-based cream
1/4 tsp vanilla extract
1 tbsp maple syrup
Juice of 1/4 fresh orange
~1/2 tsp orange zest + extra to top
½ tsp cocoa powder, to top

Method:
Add plant-based cream, vanilla, maple syrup, orange juice and orange zest to a glass and use a milk frother to combine until smooth and fluffy.

Add ice cubes to a glass, pour over the chocolate coconut water. Top with the cold foam, as well as extra orange zest and cocoa powder if desired. Enjoy!
