Teriyaki Lime Noodes

These teriyaki lime noodles are such a go-to for me when I’m working from home. They come together in less than 15 minutes & are packed full of flavour.

Ingredients:
- 1/2 head broccoli, cut into florets
- 1/2 fresh lime
- 2 spring onions, finely sliced
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1/4 cup teriyaki sauce
- 100g edamame
- 200g udon noodles
- sesame seeds, to serve
- salt and pepper, to taste

Method:
1. Add oil, broccoli, salt and pepper to a frying pan over medium-high heat. Place a small pot of water over the stove to boil.
2. Whilst the broccoli is frying, prepare the sauce by combining soy sauce, teriyaki sauce and fresh lime juice in a small jar.
3. Add edamame to the pan with the broccoli and continue frying for 2-3 minutes. Once water is boiling, add the udon noodles and cook as per packet instructions (should be between 1-4 minutes cooking time). Once done, drain.
4. Add drained noodles to the pan with broccoli and edamame, followed by the sauce mixture. Mix and fry on medium heat for a further 2 minutes.
5. Transfer noodles and veggies to a bowl, top with spring onions and sesame seeds, and enjoy!
