BBQ Baked Beans

One of my fave breakfasts at the moment, these baked beans are really easy to make, packed full of flavour + plant-based protein and great to meal prep!

If you’d like to meal prep these for the week, I recommend doing doubling the ingredients

Ingredients:
- 1/2 tbsp olive oil
- 1/2 brown onion, diced
- 2 garlic cloves, grated or crushed
- 2 tsp smoked paprika
- 1 tbsp tomato paste
- 1/2 tbsp soy sauce
- 1/2 tsp liquid smoke (a few drops)
- 2 tbsp bbq sauce
- 2 tbsp water (add more if needed)
- 1 x 400g can of butter beans or cannellini beans, drained and rinsed


To serve:
- toasted sourdough
- cashew cheese
- chives



Method:
1. Place a large frying pan over medium heat, add the oil. Once the oil is hot, add the onion and fry for 2-3 minutes

2. Add the garlic, smoked paprika and tomato paste and continue frying for a further 2-3 minutes

3. Add soy sauce, liquid smoke, bbq sauce and water, and mix together well. Add butter/cannellini beans and leave on the heat for a further 5 minutes, mixing well

4. Serve hot on toasted sourdough, or once cool store in a container in the fridge for up to 5 days. Enjoy!
