Frozen Yoghurt Slice

This frozen yoghurt slice is super easy to make & a great one to prep for a busy week ahead! Enjoy as a breakfast or a snack in the Summertime

Makes 8 serves

Ingredients:
Biscuit base:

1 + 3/4 cups almond meal
- 1 tbsp flax meal
- 1/4 cup maple syrup
- 1/3 cup cashew butter
- pinch of salt

Yoghurt layer:
-
600g plant-based yoghurt
- zest of 1 lemon
- juice of 1 lemon

Blueberry layer:
-
1 cup fresh blueberries
- 1 tbsp maple syrup
- splash of water

Method:
1. Line a 15 x 30 slice pan with baking paper.

2. Place a small saucepan over medium heat on the stove. Add blueberries, 1 tbsp maple syrup and a splash of water. Leave to heat and reduce for 8-10 minutes, stirring occasionally.

3. Add almond meal, flax meal, 1/4 cup maple syrup, cashew butter and a pinch of salt to a mixing bowl. Using a spoon and your hands, if necessary, mix together to form a doughy biscuit layer. Transfer to the slice pan, spreading evenly and pressing to make a base.

4. In a seperate bowl, mix together yoghurt, lemon zest and lemon juice until smooth. Then, pour over the top of the biscuit base. Top with the blueberry mixture, swirling it as desired, and then place into the freezer for 4-5 hours.

5. Remove from the freezer, slicing into 8 pieces. Place into an air-tight container and back into the freezer. When you’re ready to eat, remove a slice from the freezer and enjoy!
