Tofu Cream Cheese

Tofu cream cheese is a super delicious, high-protein spread that I’ve been absolutely loving lately! Prep in advance to have a quick and easy breakfast ready to go.

Makes 7-8 serves

Ingredients:
- 350-400g firm tofu
- 2 tsp apple cider vinegar
- 1 tbsp coconut oil
- 1 tbsp veggie stock powder
- 1 tbsp nutritional yeast
- 2 tbsp water
- Juice of 1 lemon
- Fresh dill, as desired
- Fresh chives, as desired
- Salt and pepper, to taste

Method:
1. Add tofu, apple cider vinegar, coconut oil, veggie stock powder, nutritional yeast, water and lemon to a food processor or blender. Blend until smooth.
2. Roughly chop chives and dill, and add to the tofu mixture. Add salt and pepper, to taste. Blend briefly to mix well.
3. Transfer to an airtight container and store in the fridge for up to 5 days. When desired, serve on toasted sourdough with fresh tomatoes and enjoy!
